Very often when coffee lovers brew light roast coffees, they notice that the overall process takes a bit longer than brewing, say, a medium or dark roast. This has much to do with the fact that light roasted coffees are more dense than their darker cousins. This is true because they're simply not roasted as long as darker roasts.
Porous, porosity, density...oh my!
You see, the roasting process tends to break down a bean's physical structure, causing it to achieve a level of porosity. Lighter roasts are simply less porous than darker roasts. As a result, there is a bit less space for water to travel through lighter roasts. Thus, it takes a little longer to brew a light roasted coffee.
A little hotter perhaps
For best results, we recommend brewing lighter roast coffees with slightly hotter water if possible -- try 92-93C / 197-199F. This may slightly quicken the brewing process, as well as improve overall flavor extraction.
